Paul Adams, known for over a decade as Chef Pablo, grew up in a house where Sundays meant an all day cooking marathon. Watching his dad hand score the crackling on a pork roast, taking that kind of care over an ordinary meal, shaped his appreciation for turning a regular Sunday dinner into a special event. It's why this site exists. The mission really took hold when Paul moved away from his hometown of San Diego and couldn't stop craving his old favorite, Rubio's fish taco, so in 2005 he set out to recreate it himself. That grew into something bigger: take our favorite restaurant recipes we love and make them better at home, one recipe at a time.
